Today I will be making whole wheat gaund panjiri. Gaund is a natural edible gum. Gaund provides the heat to the body. So usually it’s eaten in cold winter months. This is also given to the nursing mothers to help for lactation and provide the nutritions for the baby. The main ingredient for this panjiri is whole wheat flour, gaund, nuts, ghee and sugar. This recipe will make about 20 pieces. For this recipe we need: 1/4 cup of melon seeds (kharbooje ki giri) 1/2 cup of lotus seeds (makhana) 1/2 cup of gaund 3/4 cup of crushed almonds 1 cup of whole wheat flour 3/4 cup of ghee or clarified butter 1 cup and 2 tablespoons of sugar 1/2 cup of water 1 teaspoon of ajwain (carom seeds) 1 teaspoon of ginger powder or saunth. For this panjiri some preparations are needed. Makhanas cut them in 4-5 small pieces, I have already done that. Gaund comes in big lumps which you have to break them using the hammer. And maybe you have your husband helping you on that. And these are also I did and as you see they are very small pieces. Melon seeds need to be washed. And I already washed these. This recipe is done in three steps. And I will be roasting one item at a time. So first I will roast the melon seeds then lotus seeds and gaund. And last I will roast the whole wheat flour. Heat is on, medium high. So first I am going to roast melon seeds. This should take about 2-3 minutes. As seeds are getting ready, they will start popping like a pop corn. And after first when they start popping it will take about another half a minute and then these are ready. And as you see they have about doubled up in the size. In the same pan now we will do makhanas. So first we will put 1 tablespoon of ghee. Makhana And this should take just about 1-2 minutes. Makhana will change the color very lightly. Or you can pick up one makhana and break it. It will be crunchy so it’s ready. And now we are going to fry the gaund. So first let’s put 2 tablespoons of ghee (clarified butter). And gaund. Just stir fry it. It will absorb all the butter you have put it in. You have to continuously stir fry this. This will take about 2-3 minutes. And as you see this has started changing the color. It will become white color like the pop corn. And become about 2-3 time in the volume. It has been about 4 minutes. And as you see all the gaund has puffed up. So this is ready. And now we are going to roast the whole wheat flour. Put all the remaining ghee. And flour. Stir fry and roast them for about 3-4 minutes. I have been stirring continuously. It has been about 3 minutes. So I am going to add the almonds. Ajwain And ginger powder. And roast again for about 4-5 minutes till you start getting the aroma of roasted flour. This has been 4 minutes. And I can smell the sweet aroma of flour. I am going to add the gaund (giri) and lotus seeds. And mix it well. And just fry it for another minute. This is ready and looks very good. Now I need to make the syrup. For the syrup I need 1/2 cup of water. And sugar. Bring it to boil. And then we will reduce the heat to medium. And let it boil till it is about half a thread or 220 degrees on candy thermometer. Sugar is boiling, so I am going to lower the heat to medium. And it should take about 2-3 minutes before syrup is ready. This is now about 220 degrees. I am going to mix the syrup with the flour mixture. Mix it well. Close the heat. Mix it well. And now pour this over the greased plate. And spread. Looks and smell really good. It will take about 10 minutes to dry up. And after that you can break that in the pieces. Panjiri looks great.
