Welcome to nishamadhulika.com Today we will make tutti fruity. It is used in cakes, cookies, biscuits, ice-creams etc. Let’s see what ingredients are required for making tutti fruity. Sugar – 2 cup Raw papaya – 1 (400 gram) Vanilla essence Yellow food color Red-orange food color You can also use green color but tutti fruity is usually made in these three colors only. We will make white, yellow and red-orange colored tutti fruity. Firstly peel papaya and then slice it. Remove the stalk and skin from papaya. For making tutti fruity cut papaya into small pieces. Remove the inner soft part as well. Now make small pieces of the papaya. Like wise cut whole papaya. Now blench the papaya pieces. Take enough water in any utensil so that the papaya pieces get dipped in it nicely. We have taken 3 cup water and let it boil. When water starts boiling add papaya pieces in water and boil for 3 minutes. After 3 minutes turn off the gas and keep them as it is in water for 5 minutes. Take them out from water and strain the excess water with help of a sieve. We have blenched the papaya slices now we will cook them in sugar syrup. Add sugar in a utensil. Also add 2 cup water in it. Turn on the gas and cook until sugar gets dissolved in water completely. When the sugar will melt completely add papaya pieces in the sugar syrup. Add blenched papaya pieces in sugar syrup now and cook until sugar becomes thick. Stir after every 5-6 minutes. Check the consistency of sugar. It has started forming thread. Turn of the gas. Add 2-3 drops of vanilla essence in the sugar syrup. Now add the cooked papaya pieces in color. Take 1-2 pinch yellow color in one bowl and 1-2 pinch red-orange color in other utensil. Divide the papaya pieces in three equal parts. Mix nicely with help of a spoon. This will come out in yellow colored tutti fruity. This will be red-orange colored tutti fruity. This will come out to be transparent or white in color. We have made three color tutti fruity. It cannot be brought in use immediately. They need to be soaked in colored sugar syrup as it is for around 12-24 hours. After this the papaya pieces will be strained and dried in open air completely. We have soaked tutti fruity in colored sugar syrup for 24 hours due to which the sweetness and color is absorbed in it completely. Take a sieve with thick wires and strain the sugar syrup completely from the papaya pieces. Now place it on a wire net so that it dries up completely. If we dry it up in a plate it may take some time to dry them up. Like wise strain the yellow colored tutti fruity. Place it on wire net as well. Strain the red colored tutti fruity as well in similar manner and place it on wire net. Dry them completely under fan until its stickiness gets absorbed. The sugar syrup can be used again for making tutti fruity or use them for making drinks or sharbats. Tutti fruity is ready and it can be store in container now. It appears to be very shiny.
