PALEO CINNAMON ROLLS: healthy cinnamon roll recipe


hey everyone welcome back to my channel
and welcome if you’re new in today’s video I’m showing you how to make the
best paleo cinnamon rolls or cinnamon buns whatever you call them but they are
so moist and delicious and yummy if you guys are a fan of cinnamon buns you are
going to love this recipe so let’s go ahead and jump right into it so to make
these delicious healthy cinnamon rolls I’m starting off by using some yeast
which is gonna help really make them fluffy and rise if you want a yeast free
recipe I will leave one that I made last year or the year before down below to
that I’m adding in some slightly warmed almond milk you want it to be warm but
definitely not scalding or boiling but warm really helps to activate the yeast
then to that I’m gonna be adding in some coconut sugar which is really my pantry
sugar that I like to keep on hand it’s an unrefined sugar and I find it
just easy to use and so many different types of baking it’s like an easy switch
you can make from your normal white sugar or brown sugar just to coconut
sugar I also buy it in bulk at Costco so it’s really cost effective too to that
I’m adding in two eggs plus one egg yolk and some apple cider vinegar along with
some ghee but you can also use some coconut oil here I haven’t tried this
recipe with flax eggs so I’m not sure if that will bind the cinnamon rolls enough
but if you do and it works please comment down below so that others who
might want to use flax eggs will know if it’ll work so I just break up the yolks
and then we’re gonna whisk all of that wet ingredients together until it is
nice and combined in a separate Bowl I’m using this paleo flour Bund
by Bob’s Red Mill it’s really good it just has a blend of a bunch of different
flours so if you don’t want to buy a bunch of different ones this blend is
already ready to go for lots of different types of baking if you can’t
find this flour blend you can use just almond flour but use slightly less I’m
gonna add in baking soda vanilla and then I’m just using the dough hook on my
handheld KitchenAid mixer but you can definitely stir this together by hand I
just find this really helps to break up the clumps and really makes it nice and
smooth easier but like I said if you don’t have a mixer or if you even have
one of those big mixers that stand on your counter you can use that too or you
can do it by hand just make sure everything is combined and then once
it’s combined stop mixing it because we don’t want it to over mix it will also
be quite a sticky dough that’s gonna thicken as it proofs so we are gonna
leave this to proof for about an hour and a half if you want to stick it in
the fridge overnight you can proof it overnight just leave it outside of the
fridge and allow it to come to room temperature and rise a little bit more
when you want to make it the next morning for the filling I’m using
coconut sugar vanilla and of course a lot of cinnamon which is great for your
blood sugar also at this time of year then to that I’m gonna be adding in some
ghee but you can definitely use coconut oil here too and this is what’s gonna
make the nice yummy cinnamon filling that’s going to go inside of our rolls
and just stir that together you don’t want either that your coconut oil or the
ghee that you’re using to be completely melted because then it’s just going to
be more of a soupy filling and it’s not gonna spread onto your dough so once
your dough has about doubled in size either overnight or left for about an
hour and a half we are ready to assemble so I’m just pressing it down until about
like a nine inch by nine inch square or about one inch thick and then you just
use some flour if you find it’s getting a little bit sticky I use some arrowroot
flour you can use castle flower on the flower whatever you have on hand and
then I’m just sprinkling on the filling in all the different spots that we’re
gonna spread on later but I find by crumbling it first a bit you’re better
off getting any more even distribution into your cinnamon rolls or cinnamon bun
let me go down below what do you call them cinnamon rolls or cinnamon buns I
feel like I’m honestly 50/50 sometimes I say cinnamon rolls sometimes I say
cinnamon buns another great thing about this recipe is that you can definitely
assemble them completely beforehand and then just bake them off that morning or
even put them in the freezer and then defrost and bake any leftovers I would
suggest putting in the fridge for two or three days or if you’re not gonna eat
them after three days pop them in the freezer and then that way you can just
warm them up whenever you want one so then you’re just going to carefully roll
it this dough is wetter and a little bit more sticky than your traditional dough
that may have gluten and other things in them so you have to be a little bit more
delicate with it and just gently roll it it will roll you just have to be a
little bit more careful and also make sure your hands are floured or they’re
not sticking then I’m just using a knife to slice up my cinnamon rolls so this
made ten large rolls for me I ended up having one but I couldn’t even fit in
the pan that I just cooked in a little cupcake ramekin dish but you could also
if you don’t have it’s a circular pan like this you can’t put this and like
your normal muffin tins that will work too or just place it on a baking sheet
but I really like when you bake them all up like this in a pan and they kind of
all grow together and all the flavors kind of meld so just lay them all in
until it is nice and full and while that is in the oven you can go ahead and make
your glaze so I’m using some almond milk as well as some coconut butter I find
coconut butter honestly makes the easiest glaze ever and then you just
have to microwave that until it’s nice and soft and you can spread it on make
sure you allow your cinnamon buns to cool a little bit before you put it on
otherwise the icing or frosting will run all over the place if you like that
that’s great if you’re having the morning of but if you’re gonna frost
them ahead of time I would wait till it cools and then add your frosting and
then whenever you want you can just pop it in the microwave for about 15 seconds
and it’ll melt and be gooey gooey delicious all right guys thanks for
