Paleo Banana Pancakes | Gluten, Grain + Dairy Free

I am always team pancakes and I think Jack Johnson was onto something with
banana pancakes cuz today we’re gonna make some super fluffy super moist
banana pancakes that are paleo friendly gluten free and a grain free these are
gonna be your new favorite breakfast so let’s dive right into the recipe so step
number one is we’re gonna mix all our dry ingredients and we’re going to start
by sifting some coconut flour we have a fine sifter or a sieve or whatever you
want to call it and some coconut flour and just sift away just press out any
Lumpy’s and we need five tablespoons just about thirty grams so I always like
to measure my flour to ensure accurate results the secret ingredient to making
these pancakes light and fluffy is tapioca starch which is made from the
crushed pulp of a cassava root you might see it also called as tapioca flour
which is the same thing but if you see cassava flour that is not the same thing
so don’t use that so we have six tablespoons of our tapioca flour or
starch which is 50 grams add that right to your coconut flour I want two teaspoons of baking powder to
make them nice and light and fluffy and a pinch of sea salt
I’m just gonna whisk it all together because they are banana pancakes we have to mash them
banana so we need one and a half large bananas which should be 200 grams or
about three-quarters of a cup I’m gonna measure by grams since it’s more
accurate place your nice ripe make sure they’re nice and spotty and brown
because they’re nice and sweet and they’ll be really easy to mash so now we just have to
mash them real good so once you have your banana all mashed up we’re gonna
add in two eggs third of a cup almond milk I use
unsweetened vanilla some vanilla extract and 2 teaspoons of honey and whisk it all together now we’re
gonna add that coconut flour tapioca tapioca flour mixture into the bowl and
whisk until well combined then we’ll add our pancake batter rest for five minutes
so the coconut flour can start to absorb all the moisture but while you’re
waiting I have a little banana fun fact for you did you know bananas are high in
easily digestible carbs and minerals that are gonna help post-workout
soreness and also fuel your muscles after a tough workout so you better
believe these banana pancakes are great for breakfast you guessed it by the
magic of television we have have a griddle all you need about a quarter of a cup of
pancake batter per pancake pour it onto your preheated griddle spreading it out
just slightly cook them about 4 to 6 minutes you want to
flip up and cook the other side another 3 to 5 minutes later and our pancakes
are nice and golden brown on both sides and ready to eat and there you have it perfectly fluffy
paleo banana pancakes that are great for a weekend brunch weekday breakfast or
