you will be really surprised ayurveda says to live in tune with nature
and living in tune with nature is about honoring our senses so there are many
ways to do that and one of the easiest ways is through food one of my very
favorite quotes is from Alberto Villoldo and I believe that this really
explains what ayurveda is all about it says we are spirits in a body and the
reason we came here to this world and to this earth from the spirit world is so
we could experience chocolate among other things good coffee and the senses
honoring the senses through chocolate another name for chocolate through the
ages is a theobroma and Theobroma is a Greek word and comes from food
of the gods theos t-h-e-o-s is god in greek broma b-r-o-m-a is food so chocolate has been called through the ages food of the gods
and there is a really good reason for that so one of the main dosha of ayurveda
is the Vata dosha and the Vata dosha is what ayurveda says that tends to go out of
balance the most often because it’s all about movement and ayurveda says
the way to balance the the vata dosha the main way is through good
fat guess what really good chocolate clean
chocolate bean to bar is all about fat that’s why we crave so much chocolate
but what happens is most of the commercial chocolate is not
clean it has tons of toxins processed stuff in there so it’s not good fat by
the time it gets into our body isn’t that amazing
so exactly that’s why your body knows our body when it is relatively balanced
knows what it’s good for it that’s why we crave the good chocolate
is the fat and actually white chocolate the pure white chocolate it is pure fat
it doesn’t even have the cocoa bean in there the the cocoa powder so but that’s
the main idea that’s why women through different times of the month all that we
crave that good chocolate and also the bitter and the astringent tastes even
though some traditional Ayurvedic practitioners may say bitter and
astringent taste is terrible for vata well it’s what vata exactly right white
with lemon yep the sour that’s the sour taste
that’s the lemon gives you that’s one of the main tastes that pacifies vata
exactly that’s the best yep so white chocolate with lemon and if you can get
it with a little bit sea salt in there or you can even add your own Himalayan
salt it’s well it’s almost medicine right that’s what it is for us so and even the
bitter and the astringent tastes they may say that they throw vata off but in
today’s culture we don’t get any of the bitter and the astringent taste in our
diet and we need it we need it to some extent all the tastes are good exactly I
know and we’ll talk about some really really good chocolate here shortly so so
yep bitter and astringent we still need to keep that balance also Vastu
Shastra which is a part of ayurveda it’s like the ayurvedic Feng Shui vastu
Shastra talks it’s the science of the space and the time it says that ideally
the best time to eat chocolate is in the afternoon like three to four o’clock and
if you think about it for those of you who know ayurveda even deeper that’s
the vata time that’s one of the two vata times in the 24-hour period
and that’s the best time to eat the chocolate for your nervous system you
can get deeper into that that’s a great question do you need different chocolate
for your constitution that’s an awesome question
it depends if you are really following ayurveda very closely and you’re paying
attention to everything you can go as deep as that in the beginning just start
with really clean chocolate with as few ingredients as possible read the
ingredients and go with as few ingredients as possible the most
important you want as little sugar as possible especially if it is
good cane sugar no added no high fructose corn syrup of course all that
stuff and as little soy lecithin you can find really good chocolate that doesn’t
have soy lecithin in it that’s even better without it look for bean to

chocolate here shortly I have all these bars so let me show you a couple
this is Colombia Sierra Nevada this is the Criollo and trinitario bean
this is white chocolate with lemon oil and lemon sea salt how about that
this is again Criollo and trinitario but this is from Colombia this is from
Dominican Republic again criollo and trinitario
and this is from Honduras just trinitario so to just go over this a
little bit depending on where the beans come from it may be the same bean like
criollo or trinitario yes one of each right but depending on the area it
has different flavors different characteristics so if the bean has grown
near banana trees it’s gonna have a little bit of the banana taste depending
on how humid it is how it was dried how it was fermented all those affect the
beans and all these bars even though most of them is just bean in there they
taste completely different because of the environment so good chocolatiers
good craft chocolate makers know how to you know where to get the
beans from and how to preserve all those properties so really you don’t need to
add anything to these chocolate bars to make them taste really really good they
will even taste sweet the ones that grow near fruity trees they will taste sweet
and fruity so look for bean to bar chocolate places near you we are very
lucky here in Florida we have castronovo chocolate denise castronovo
is an amazing chocolatier and she brings she has she’s crazy with
ecology and the rainforest and everything so she helps a lot of people
a lot of small cocoa bean farms to do really well and she knows where to get
the beans from actually that is an amazing question if the
chocolate is good you only need a couple of pieces maybe just one piece it’s not
gonna give you those cravings amazing question thank you so the better
chocolate you start eating the less you’re gonna eat the less of those
cravings and you are gonna have one or two pieces a day every day nothing wrong
with that but you will not want to eat the whole bar that’s the key and that is
another thing that the cravings that we have
and ayurveda says a lot about it shows what’s going on with the foods that we
are eating and with our body and most of the chocolates that are not the good
chocolates because of the added sugar that’s what makes you crave more either
bad sugar in it or bad salt and that’s what causes the cravings I’m
gonna have a small piece of chocolate and this should be enough this
size piece here should be enough for now I will probably have one in the evening
too but that’s how much you need when it is good chocolate so cheers everybody
