Homemade Caramel Iced Coffee | Healthy, Paleo & Gluten Free

– Hi guys, and welcome back to FFF HQ. Let’s skip our visits
to Starbucks this summer and make our own homemade paleo friendly caramel vanilla iced coffee. Make sure you hit that subscribe button so you don’t miss the
recipes every single week. Let’s dive right on in. Step one is we’re gonna
make a refined sugar-free and super easy caramel
sauce with coconut sugar, some ghee, and some almond milk. Let’s head on to the stove and make it up. So, like I talked about,
we’ve got our coconut sugar which is a healthier
alternative to brown sugar. Just unrefined. You can also use brown sugar if you don’t have coconut sugar. And then we’re gonna use
some ghee which is a very clarified butter where most of
the lactose has been removed. This is good for Mr. FFF
since he can’t have dairy. It’s also got a better flavor, I think so at least, it’s more rich. And then we have some almond milk. And half a teaspoon of vanilla extract. I’m gonna turn this on
to a medium-high heat and then we’re gonna stir it
until it all mixes together and bring it to a boil. (upbeat music) Once it’s boiling, which
is very rapidly boiling, you can turn it down to a medium-low heat. We’re gonna reduce it
until about half reduced. Which is about five to six minutes. So after five or six minutes
you can see it gets really dark and it’s very thick. I’m just gonna transfer it
to a bowl so it can cool so we can make our iced coffee. (upbeat music) Now we are ready to make our iced coffee. So if you want, I’m gonna start again. Ready? And now we are ready to
make our iced coffee. So if you wanna be fancy, you
can take some of that caramel once it’s nice and cool
and thick, you can see. And you can swirl it onto a
cup or you can mix it right in. You don’t really have to do this but we’re being very fabulous today. (upbeat music) and then we’re gonna fill the
cup about halfway with ice. Because it’s an iced coffee. (upbeat music) And one cup of chilled brewed coffee. A third of a cup of unsweetened
vanilla almond milk. And then two tablespoons of caramel. You can use to taste if you
don’t want quite two tablespoons or if you want more. It’s really up to you. (upbeat music) It’s very sticky so it’s
good to use a spatula to get that in. You just wanna stir it all together. It’s super simple, it’s super refreshing. A homemade caramel vanilla iced coffee that’s a little bit better for
you and a whole lot cheaper than going to Starbucks. So if you try this caramel
vanilla iced coffee this summer, please leave a comment below
