Welcome to “Bake with Me.” I could not be
more excited to have you here with us today.
Today I bring to you something very, very special.
Sorry, I just called you a thing. Okay. He is a comedian. I am. He is a late-night
talk-show host. You will find him on the show The Lowdown with oh I don’t want
to say your name yet. I’ll tell you (okay) later
and you’ll find that on Sling TV and Dish TV perhaps? Yes. I’m so good. You are
very good. Well thank you. Yes. You will find him on any given Friday or
Saturday night or any day of the week around the country doing stand-up comedy.
He is brilliant. I would love to introduce you to my friend, James Yon.
Thank you for having me. So his show is called The Lowdown with James Yon.
That’s right. Aptly named. It’s awesome. Thank you. Great show. Thank you. So, James why did I invite you to be with
us here today? Because first off you love me.
I mean I do, yes. And second because you’re gonna teach me to bake because I
have diabetes. I have type-2. Okay. Yes. Type 2 diabetes
Can you tell us a little bit about how it affects you? Okay, I mean I’m from the south that
means I don’t get to eat any of the good foods I love. No, it just limits the
amount of carbs that I can take and amount of sugar that I can have. Okay so
how do you treat it? I just have to stay away from certain foods. Are you on insulin or medication? I’m on medication. I have type 2 so I don’t have to take insulin,
thank God, so I just need to make better decisions when I go out let’s say to eat
or I’m on the road which is challenging as a comic because everything’s cheaper
when it’s fattier and full of all the things I don’t need, so I have to take my
time and pick out the right food. And that’s hard to do and then the doctors probably
recommend, as as sad as this is, to lose weight or exercising those kinds. Yes,
absolutely. Every day. See, I love this place because you have a bike on the wall. That’s where it should be I don’t want to ride it.
So I am gonna teach you today, John. I’ll be James.
You’ll be James. I tried to combine James and Yon. It didn’t work. James this is actually a paleo cake
there’s gonna be no sugar in it. Let me say that again. I’m gonna bake you a cake with chocolate
frosting and there will be no sugar in it. Did you see the look on my face when you said no sugar? I was terrified. You’re gonna eat it and you’re gonna love it. I believe that. It’s what you have to
do to keep yourself healthy and safe. Anything you make I know is gonna be
delicious. Yay. All right so let’s get to it. I’m
gonna have you mix the dry. Okay I’ll do the dry. All right so we have here, we
have a cup of almond flour. Put that in the bowl. I don’t mind at all. Thank you. All right coconut flour awesome and we
have 1/2 teaspoon of baking soda baking soda in a quarter teaspoon of sea salt.
Gotcha. Not to be confused with that regular salt. No, but you could use regular salt if that’s all you have in your kitchen. Okay.
So you’re gonna stir this up a little bit all right and I’m going to mix the
wet ingredients, so we are gonna give this cake some consistency and we
are gonna put 6 eggs in it. You need that to make the cake if we’re not gonna have
any type of sugar we need… that smells good already. I’m gonna steal your whisk it that okay? I’m gonna take a whisk. You’re hired. Alright so we’re gonna just lightly beat
these eggs. Keep your mouth shut over there. I am. I am.
Lightly beating the eggs, not like you do to your children. Oh I would never
beat them. Okay, so we have one cup of melted coconut oil, there we go, and we’re
just gonna whisk that a little bit in our eggs.
One cup of maple syrup. This is where we’re gonna get our sweetness from and
not have to have sugar. Okay. Maple syrup has what they call a low
glycemic index, so it does not escalate your sugar. Okay so I could drink a bottle of
that. I don’t recommend…you know I’ll tell you why I don’t recommend it, it’s expensive.
Okay, got it. Yeah. We call it liquid gold in my house because it should be made of gold when
you have to pay $17 for a bottle. Must be some good syrup. It is. So, then we have
one tablespoon of vanilla extract and we have a quarter cup of you can either use
almond milk or coconut milk. Okay, so this is gonna be real super simple. While I
mix this a little bit, James, why don’t you tell me a little bit about life with
diabetes. Okay, well in my household my son Jack also has diabetes type one and celiac disease. Wow. Wow is right. Yes, Jack will probably eat this cake. So for us we try to get our whole family involved in eating
healthier, like how we eat in the house all changed when we found out we
had diabetes. We took all the snacks away, we eat better things now for us and
the sugars that we do have are not processed. Okay, you eat more natural sugars. Yes, absolutely. So you’re probably gonna lose weight right away just by
changing those types of habits. Absolutely. Yeah I was a bigger person. I
was around 350. So you’ve already lost a lot. Yeah, I’m 150 now but… And we believe you, James. Thank you for believing me. Yes. Gotcha. Okay, darling, right we don’t lie
to our audience. We want them to trust us so we’re just gonna move on with the
recipe. This is not a marriage? Okay so we are going to combine our dry ingredients. I
swear they’re really dry and we are going to just pour those into our wet
ingredients. Thank you. That was quite lovely. We are
gonna stir these up. I’m so happy for you that you started to make those changes.
It’s a hard thing to do. First of all making the choice,
(yes) is difficult enough and then to do it, because it’s very time-consuming.
It is. It really is to eat healthier it takes more time. I think the choice is
not hard, but the follow-through that’s what it is. I think for me the reason why
I say the choice is hard is because I’m very dedicated so like if I decide
that this is what I’m gonna do… Really? You’re focused. I am NOT gonna screw that up, otherwise
you know. I understand so that’s why the choice is hard for me but I’ve made that
choice as well and I’ve been doing really well eating more fruits and vegetables into my world and (gotcha) not eating too many baked goods. When you make them like this you can indulge a little. It’s okay. I promise not to eat a lot of this… in the
first hour. But you already lied to me once. You can trust me. Look at this face. That is a face you can trust. Right.
Alright, so this is really super simple. We’ve already combined all these
ingredients. Let me get in there real quick. This smells incredible. Yes the
almond flour and the coconut flour give it the base that you need to actually
make a cake without giving you that processed harsh, you know, heavy carb-y
you know sugars. All right my dear can we put this over there in one of those
bowls. Gotcha. Look how simple this is guys we are gonna take two pans
and we are gonna dump half the batter in each pan… one… two and then we are going to preheat our oven to 350 degrees and you’re gonna bake these two cakes for 20
to 25 minutes. That’s so simple, what you just did. It’s so simple.
Do you think you could do this at home? I’m gonna get some help, but yeah. Well
you can have Jack help, because (absolutely that’ll be fun) If he needs to eat, if he’s celiac and diabetic then he will need to eat a cake just like this. So 350 degrees
20 to 25 minutes and we’ll see you when our cakes are baked. Can’t wait. We are back and our cakes are baked and we are ready to frost it with delicious
chocolate frosting with no sugar. Trust me. No, don’t get scared. Don’t turn it off
No… Like seriously we are going to make the
best chocolate frosting without sugar. Somebody just passed out when you said
that. Yeah. Alright so we’re gonna get started on this and then while we’re
mixing we’ll talk a little bit, okay? Okay. No worries because we love to talk
over the mixer. Yes we do. Makes sense. That’s okay. Great, so let’s start with… what do we want to start with? Should we start with
chocolate? Yes, we have 8 ounces of dark chocolate which means it’s just cacao.
Really, do you know how to say it because I don’t. And I can’t just say cacao
I have to take say CA-COW. CA-COW, it sounds better. Sounds better yes.
So you want to make sure you have 70% or more CA-COW (mm-hmm) and it’s
gonna be melted so we are going to… look at this. I got all of it, yeah got it. I
got this. Look at that. Oh yeah while he’s working on that (we
don’t just stop now) if you lick that bowl. I won’t on… camera. Save it for later.
Gotcha. You got it. Yeah all good. Perfect. I’m gonna switch with you and then we
are going to mix in a full cup of almond butter hmm oh there you go
awesome here it is there it is so now we stop we have 2/3 cup of maple syrup
which is gonna give us some extra sweetness more but again low glycemic
index so it won’t raise your blood sugar loving this already and we have two
tablespoons of alrighty 1/4 cup of melted coconut milk uh-huh
I mean coconut oil that doesn’t make sense this is the coconut milk rice this
is actually you can I use almond milk you can have an almond milk with coconut
milk or just coconut milk on its own and this is half a cup so get that mixer
ready already are you ready I’ve been practicing all
right let’s do this so James why don’t you tell me or tell our audience what
it’s like or if there’s anything else you want them to know about living with
diabetes I’m glad you asked that one of the misconceptions about having diabetes
is once you’re diagnosed life is over I can’t eat all the things I enjoy that
not to true there’s many substitutions that you can make and there’s things you
can eat but it’s about portion it’s about making the right decision so your
life’s not over it’s gonna be fine yeah and you can come and eat paleo okay so
all of you getting your cars now meet me and Rob yeah this cake will feed
everybody they will look at that nice it’s really forming and coming together
oh that’s awesome beautiful so we just drink this out of
the bowl got it let me check consistency here it’s actually a little bit runny
but you know what that’s okay that’s gonna be fine
we’re gonna be okay with that today gotcha for our purposes but you can
always thicken this up with a little extra almond butter or chocolate if you
want to you right can’t hurt mm-hmm so let’s pull that cake over here for me
okay and we are gonna put a little icing on the cake
gotcha one for the cake one from my mouth right that’s how that works put
your finger in it tell me what you think mmm is it good mmm do you miss the sugar
I don’t I don’t that’s delicious it’s delicious it’s
gluten-free it’s sugar-free so it’s paleo you do magic that’s like the word
right that’s the word of the year paleo that is delicious people I’m time Wow
so we’re gonna leave the sides a little naked there look at that I am a
professional do not try this at home actually no please try it at home doctor
yeah please do this again and look at this I’m just gonna oh my gosh look at
that you are genius oh you know I’ve been called worse no I understand they
don’t know you like I hear you are amazing
all right so anything else you want to tell our audience
um Robins living proof that if you have something that a little just it’s a
little different if you have something they tales you man different you
health-wise there’s ways to still enjoy the things that you love and you just
have reach out and get the information and watch our show oh that’s a good

that’s how we do it all right let’s see if we can pass the
test of having a good oh look at that freak oh yes sorry oh no no you’re doing
good now that you get this God’s gonna say yeah you hold that yeah I’ll take

in your mouth it’s like butter all right what’s really
good I would punch a baby again you beat your eggs that’s not the DJ that’s not
the kids I’m learning ever that’s right I’m learning how to eat with diabetes
