Today I’m going to tell you about one of my
favorite vegetables: fennel. It’s crisp, cool, crunchy, very similar in texture to celery
but the flavour is out of this world. Almost like a mild anise or licorice. You can roast it, barbecue it, stir fry it,

flavour. It’s low in calories and packed with nutrients. One cup has only 25 calories and
is a good source of potassium, folate and vitamin c. Folate is a B Vitamin that is needed
for healthy red blood cells and to prevent anemia. Diets that contain foods that are
rich in folate may help to reduce cancer. Potassium is a mineral that helps lower blood
pressure. Vitamin C is a powerful antioxidant that helps keep your immune system strong.
It’s also needed to form collagen – a protein that you neeed for healthy bones and skin.
It also contains a plant nutrient called anatholay. Anatholay can help to lower inflammation and
may help to prevent cancer. And don’t forget about the fennel seeds. In some cultures they’re
