Hi! Welcome to Sandy’s Kitchen! New Food for A New Mood! Today I’m going to show you an authentic Chinese dish, Scrambled egg with chives It’s easy to get chives in any grocery store. They look a little like the tops of green onions but they are thinner and flatter. Chives are low in calories but high in beneficial nutrients and cooking it with egg, which is a good resource of protein, makes it a dish for a healthy diet. First, cut chives into sections about 2 inches long. Using a whisk to beat 4 eggs until small bubbles appear, which means they’re fully blended. This is the key to making perfect scrambled eggs. The second step is to use a wok or a pan depending on your preference Heat 1 tbsp. of olive oil on medium heat until hot. Pour in eggs, let it sit for few seconds. Using a spatula, push the egg from one side to another, then pull it back. Repeat for 3 to 4 times Then break eggs in the middle. This way you can get big chunks of egg The whole process should be done within 2 minutes, because we don’t want the scrambled eggs to be brown on the bottom. Here is the other key, turn off the heat before the eggs are all the way cooked. Transfer to a plate to sit aside. Next, is to stir fry chives. Heat half tbsp. of olive oil on high heat Add a pinch of salt and stir fry. Adding salt is not just for the flavor, but it can help draw moisture out of the chives, softening them faster. After about only 2 minutes, the chives should have softened and you should see the juice sitting on the bottom. Now quickly add our eggs and stir fry for about 20 seconds. Season with some salt to taste before you remove it from the heat. Remove to a plate and you can serve it with rice. It’s a light, healthy and delicious dish.
